Last Thursday our new apprentice, Samantha, took part in the UK Junior Chocolate Masters at Barry Callebaut’s UK Chocolate Academy in Oxfordshire.
5 chocolatiers aged 17-23 took part in the competition, which had the theme Architecture of Taste. Competitors had to produce 4 plated chocolate desserts, 30-60 individual chocolates and a show piece in a 7 hour period.
For her plated dessert, Samantha made a chocolate and passion fruit mille feuille served with fresh mango and a fresh passion fruit & mango sorbet. All of her entries include white chocolate discs decorated with a chart showing the flavour profile (the taste structure) of the 66% Mexique chocolate she used.
For her chocolates, Samantha filled hand-decorated domes with layers of lychee & rose jelly and raspberry ganache then finished them with the flavour profile decoration.
Samantha’s show piece stood 80cm tall and really brought the idea of taste to life. It featured an eye flower, nose, mouth with tongue, cutlery, and flavour profile discs matching the chocolates.
Samantha worked really hard to get to the awards and we’re so proud of her achievement. Congratulations to all of the entrants, and particularly to the winner, Melissa Paul from William Curley. We can’t wait to see what they all achieve over the next few years!
