CHESTER chocoholics are feasting on truffles made with an unusual secret ingredient.
Rococo Chocolates at the Chester Grosvenor has only been open for five months but the truffles, made with Halen Man sea salt, have been a hit with chocolate lovers
Shoppers have been buying between 300 and 400 Anglesey sea salt caramel ganache truffles every week.
Manager Annie McNichoU said: ‘Chocolate lovers in Chester have spoken, they love our chocolate truffle made with Welsh sea salt.
“It works because salt intensifies the cocoa and caramel flavour notes in milk chocolate.
“Customers in Chester are always interested that the sea salt comes from a small family-run Anglesey company.”
Halen Man is made by concentrating and crystallizing water from the Menai Strait.
Rococo founder Chantal Coady was inspired to blend chocolate with sea salt while walking along a beach eating an ice cream.
Principal chocolatier Barry Johnson said:
“Salt intensifies the flavour of any ingredient, sweet or savoury, whenever it’s added. It works particularly well with milk chocolate becaus it’s so sweet.
“The sea salt is ground down before I add a pinch to each truffle. It’s a secret ingredient that people really love.”
