More than 20 years ago a woman came into Chantal’s shop on the King’s Road looking for gold leaf for a cake. She’s called Fiona Cairns, and she recently celebrated 25 years of making cakes with a party to launch her third recipe book, Seasonal Baking.
It’s a beautiful book, and Fiona’s strong, simple designs mean that her cakes look as good as they taste. In fact, she’s Chantal’s go-to for a cake if she doesn’t have time to make one herself. Fiona’s inspired by the natural world, a theme that’s reflected in her decorations and in the interesting flavour combinations grouped by season. The autumn section includes a sticky toffee apple fairy cakes, an autumn crumble cake with blackberry, apples and cobnuts and fig tarts with fennel and blackcurrant – we can’t wait to try them as the nights draw in.
Fiona is probably most famous for making Prince William and Kate Middleton’s wedding cake, but her cakes are also available in Waitrose, Selfridges and Harrods.
