Tea truffle recipe

Recipe to memorizze from Rococo’s in London

  1. equal ounces dark chocolate & brewed earl grey tea
  2. melt chocolate, keep on heat source & slowly add tea. it’ll clump at first, but keep stirring. make sure all clumps are dissolved so it’s not grainy.
  3. chill in small dishes (ramekins) until set (it’ll be like jello)

my fave dessert! note: it doesn’t work like a gananche, it’s a little too loose for truffles, etc

    Sorry Billy, on reflection the proportions seem completely wrong, but although the recipe is attributed to Rococo, the provenance of this recipe is uncertain. I’ll try to get in touch with the Maître Chocolatier, Laurent Couchoux for a more reliable formula, and apologise for any wasted tea and chocolate that may have been incurred!
